Hotel Indigo Exeter’s Colson’s Restaurant appoints new head chef | Article

Colson’s Restaurant, located within Hotel Indigo Exeter, has appointed Charlotte Vincent, who appeared on BBC2 ‘Great British Menu’ in 2022, as its new head chef.

Owned by Hotel Exe Limited and operated by Castlebridge Hospitality, Colson’s and Hotel Indigo Exeter opened in December 2022 having been restored and converted from the former House of Fraser department store.

The history of the building dates back to 1792 when Mrs Colson, a local milliner who became one of the city’s most loved characters, opened a department store there named ‘Colson’s’.

Colson’s is where the team prepares a tasting menu with produce foraged, farmed or fished from Devon farms and ocean. Hotel Indigo Exeter also features a rooftop bar called ‘Becketts’, The Dugout Sports bar, and The Retreat Spa.

Raised in Exeter, Vincent completed a Master’s in Psychology and Human Biology at the University of Plymouth before joining the Royal Logistics Corp of the British Army. She then joined Michael Caines at Gidleigh Park, where she worked as a pastry chef, before moving to The Royal Clarence Hotel in the same capacity.

She took over at The Five Bells in Devon three years ago, earning the pub a place in the UK’s Top 50 Gastropubs shortly afterwards.

Simon Hall, Castlebridge Hospitality’s managing director, said: “We are delighted to welcome Charlotte to the team who will be a tremendous asset to Colson’s Restaurant. We love to deliver locally inspired and innovative restaurant and bar concepts and this hotel is a prime example of how Hotel Indigo draws on the local neighbourhood to inspire every aspect of the hotel, from intriguing design to locally inspired menus.”
